Granola Bars
pre-heat oven to 325 degrees Fahrenheit
(163 degrees Celsius)
1 cup quick-cooking rolled oats
1 cup granola (or one more cup rolled oats)
1 cup chopped nuts (we used peanuts)
1/2 cup all-purpose flour
1/2 cup raisins (or other mixed dried fruit bits)
1 beaten egg
1/3 cup honey (we used blackberry honey)
1/3 cup cooking oil (we used canola oil)
1/4 cup packed brown sugar (we used fructose)
1/2 teaspoon ground cinnamon (we used vanilla instead))
we added:
about 1/3 cup of vanilla baking chips
Prepare one or two greased baking pans (one for thick bars, two
for thinner bars) and set aside.
Put dry ingredients in the bowl first: oats, granola, nuts, flour,
raisins, sugar, and baking chips. Mix well.
Then add wet ingredients: egg, honey, oil, and vanilla. Mix well.
Pat into baking pan(s). Cook until browned (around 25 minutes for
two pans, around 30-35 minutes for one pan).Take out of oven and
let sit until cool. Cut into bars.
